Massaged Kale Salad
2 lbs. chopped kale, thick stem removed
1 red onion, diced
3 carrots, diced
3 ripe avocados, sliced open and pits removed
2 tbsp. lemon juice
2 tsp. Celtic sea salt
½ tsp. black pepper
1/4 cup pumpkin seeds (recommended: Go Raw sprouted pumpkin seeds)
Scoop out and combine the avocado with the lemon juice, Celtic salt and pepper in a food processor or high-speed blender until smooth. Add dressing to kale and use your hands to “massage” kale (treating the kale like you would a meatloaf) until it is well-coated with the avocado dressing, and the leaves are soft. Add red onion and carrots and stir thoroughly. Taste and adjust seasonings. Garnish with pumpkin seeds.
Notes: I personally prefer Tuscan flat-leaf kale, but curly kale works just as well with this recipe.
