Bliss Bites
These raw beauties are sure to satisfy! Keep them in the freezer for an after-school or work snack, breakfast bite, or teatime treat.
1 cup pitted dates
1/2 cup goji berries
1 cup raw cashews
1 cup raw almonds
2 cups raw cacao powder
2 cups unsweetened coconut flakes
1/2 cup cacao nibs
Instructions for food processor OR Vitamin/blender:
Soak the dates and goji berries in hot water and allow to sit while preparing the other ingredients.
In a food processor, pulse together nuts, coconut and cacao powder and nibs until broken down. Strain dried fruit, reserving the liquid on the side. Add dates and goji berries into food processor and mix to form a sticky paste. Add 2-3 tbsp of date water in order to ain a uniform consistency. You may need to add more water. Be careful not to overdo the water!
In a Vitamix or other blender, you will most likely have to break down cashews and almonds separately and then mix together in a bowl with coconut, powder and nibs. The place dates in the blender along with 2-3 tbsp of reserved date water and mix using plunger to break down dates into a paste. Add dates to mixing bowl and stir to combine thoroughly.
Once mixture is formed, roll into balls and store in an airtight container, using parchment paper to separate layers so that they do not freeze together.
