Crispy Baked Artichoke Hearts
2 tbsp. olive oil
large jar artichoke hearts in water, drained
2 tbsp. chopped fresh parsley leaves
1 tsp. Celtic sea salt
1/4 tsp. freshly-ground black pepper
pinch red pepper flakes
1 slice sesame Ezekiel bread, toasted and cooled
1/3 cup grated Parmigiano cheese
Preheat oven to 350 degrees F. Place cooled toast in a food processor or blender and pulse to create bread crumbs. Set aside.
Place artichoke hearts in a glass baking dish and drizzle with olive oil. Season with salt and peppers, and toss. Sprinkle bread crumbs and cheese over artichokes and bake for 10 minutes, or until top is golden brown. Garnish with fresh parsley before serving.
