Socca
This may be my new favorite obsession. Not only is it gluten-free and satisfies the craving for bread, toast, crackers, etc. but it's only got three ingredients and is super easy to make. In an effort to recreate Italian bruschetta, I have taken to spreading my Healthiest Pesto Ever on this, but it's great with anything from grilled veggies to hummus to a sprinkle of fresh herbs.
2 cups chickpea flour
2 cups warm water
2 tbsp. olive oil
2 tsp. Celtic sea salt or pink Himalayan salt
2 tsp. rosemary
Set oven to low broil. Combine ingredients in a bowl and allow to set for 2 or more hours. Oil an oven-safe pan and heat in oven for 3-5 minutes. Remove pan and pour in socca batter so that is is about 1/4" thick. Top with fresh or dried rosemary and place under low broiler until edges are brown, which should take 10-15 minutes.
Options: Add sautéed onion, zucchini, eggplant, red pepper, or any grilled vegetable of choice to the batter before placing under broiler.
