Goji Coconut Overnight Oats
1/2 cup oats*
1/2 cup almond milk
1/4 cup goji berries
1 tbsp chia seeds
2 tbsp shredded unsweetened coconut
3-4 drops vanilla creme SweetLeaf stevia or 1-2 tsp maple syrup
Combine all ingredients in a mason jar and refrigerate overnight. In the morning, you have breakfast! Oatmeal can be warmed or eaten at room temperature.
*Use steel-cut oats for a crunchier oatmeal, or rolled oats/gluten-free rolled oats for a smoother oatmeal.
