Coconut Strawberry Overnight Oats
1/2 cup steel cut oats
1/2 cup almond milk
1 tsp scraped out vanilla beans or 1/2 tsp vanilla extract
1/4 cup unsweetened shredded coconut
2 tsp chia seeds
1 medjool date, pitted and chopped
handful fresh strawberries, chopped into bite-size pieces
Place all ingredients in a mason jar and stir to combine. Cover and place in the fridge overnight. In the morning, you have breakfast! Enjoy at room temperature or warmed on the stovetop.
