Almond (or Chocolate Almond) Butter
This recipe uses the dry bucket of a Vitamix blender to create super smooth almond butter, however, any blender will work.
3 cups raw organic almonds
pinch finely-ground Celtic sea salt
2 tbsp raw cacao powder (optional)
Preheat oven to 350º F. Spread almonds out on a baking sheet, sprinkle with salt and bake for 10-12 minutes, or until lightly tasted and fragrant. Allow to cool completely.
Place cool roasted almonds in the dry bucket of a Vitamix. Turn on and advance knob from 1 to 10, then flip the switch to high. Use the tamper to push almonds down into the blade for a minute or two, until smooth almond butter forms.
Scrape out almond butter and store in a glass mason jar. If using cacao, stir into almond butter before storing.
*Roasting almonds releases their natural oils and flavor. To keep this recipe raw, simply add 1 tbsp raw coconut oil to raw almonds and blend.
