Vegan Caprese Salad
Traditional Italian Caprese salad is usually a stack of alternating tomato and fresh mozzarella slices, interspersed with fresh basil leaves and drizzled with a good olive oil and a drop of aged balsamic vinegar. Here is my dairy-free take on the Italian classic.
1 large heirloom tomato, sliced thickly
1 avocado, halved and pitted
Celtic sea salt
high-quality olive oil
aged balsamic vinegar
fresh basil leaves, separated from stem
Slice avocado into thick slices and peel off skin. Alternate laying out tomato slices, avocado slices and basil leaves, either vertically or horizontally. Sprinkle with Celtic salt and drizzle with oil and a drop of vinegar.
