Longevity Bowl
Dr. Joel Fuhrman often recommends that people eat their "GOMBS" every day to live long and healthy lives. Here, I was able to get all of them except for the berries in one savory dish: GREENS, ONIONS, BEANS/BERRIES, and SEEDS.
3 tablespoons olive oil
1 onion, sliced
1 can Eden brand aduki beans, rinsed and drained
8 oz. baby bella mushrooms, cut
1 pound frozen green beans
2 teaspoons Celtic sea salt
1/2 teaspoon freshly ground black pepper
1/4 cup vegetable broth or white wine
1/2 teaspoon red pepper flakes
1 bunch kale (about 1/2 pound), rinsed, stemmed, and roughly chopped
2 tablespoons lemon juice
hemp seeds OR imported Grana Padano Parmigiano cheese for garnish
Heat olive oil in a large, saute pan over medium heat. Add onions and cook until translucent, about 4 minutes. Add mushrooms, green beans, aduki beans, Celtic salt, and pepper and cook for 2 minutes. Add the broth or wine and continue cooking until the green beans are almost tender, about 5 minutes. Add the red pepper flakes and the kale LAST and continue cooking until the kale has wilted, about 4 to 5 minutes. Add the lemon juice and toss. Garnish with hemp seeds or Parmigiano and serve immediately.
